Nettle Vinegar

1. Put dried nettles in a mason jar.

(You could also combine other seasonal spring nutritive herbs in for maximum results like chickweed, cleavers and dandelion.)

2. Fill jar with vinegar of your choice (balsamic, apple cider, etc.) making sure plant material is covered by a couple of inches.

3. Let sit 2-4 weeks in a dark cabinet, shaking it everyday.

4. Strain.

Take by the spoonful or dress salad or on cooked greens for optimal mineral intake.
