Chickweed Pesto

Chickweed is a nutritious spring edible that makes a delicious pesto to eat with crackers, chips, carrots or spread on toast. Chickweed pesto is a tasty treat that is a nutritive powerhouse! If you use a blender, just make sure you remove the stems, or at best chop it up really well before placing in the blender so the stems dont catch on the blades and overheat your motor.

 

 

Ingredients:

2-4 cloves of garlic minced

1/2 cup of cold pressed olive oil

2-3 cups freshly picked young chickweed leaves

1/4 cup freshly grated parmesan cheese

dash of sea salt


Instructions:

Place all the ingredients in a food blender. Blend well. Viola!
